Mile High Strawberry Pie
 

6 egg whites

1 bag frozen strawberries

2 tsp lemon juice

1 cup flour

½ cup sugar (for crust)

¼ cup sugar (for pie filling)

¼ cup melted butter

In a baking dish combine the flour and 1/2 cup of sugar.  Drizzle the butter over the mixture until it resembles course crumbs.  Spread mixture out in the pan and back until hard and crumbly.  Remove from oven and cool.  In a large bowl beat eggwhites until light and fluffy yet holds stiff peaks.  Fold in the thawed Strawberries and 1/4 cup of sugar, and the lemon juice.  Spread on the cooled crust and place in freezer.  Freeze until set and firm.  Cut into squares and serve. Makes a great light summer dessert.
